But beyond that, this particular lot has a really attractive cup character. The dry fragrance has an unusual savory sweetness: saucy, brothy, somewhat pungent and with a touch of wine. All of those savory characteristics change with the addition of hot water: the flavor profile is a more straightforward butterscotch sweetness with spicy hints of pepper and thyme.
